Forty Pounds of Zaycon Chicken for Two

I recently had my first Zaycon Fresh experience and I am happy to report I am more than satisfied.  My pick up time was between 8-9AM on Veteran’s Day, which was perfect. I work full time, and being a holiday, I had the day off from work.  I received a text and an email at 7:45 saying the truck was early and to come on down!  (Of course, being me, I was already there…)

These two folks from Zaycon could not have been any kinder or more efficient. They placed the cones, directed me in, and loaded the chicken into my car for me.

 

They were also clearly proud of the product they were delivering.

They assured me that the chicken was going to be spectacular. When I got my 40-pound box home and opened it, I thought for a second they were turkey breasts — I have never purchased this size or quality chicken breast

To get started, using kitchen shears, I separated the breasts, trimmed up the chicken (which truly required little work — anyone with a bit of cooking experience will handle it with ease!) and set out to package…

Forty Pounds of Chicken for Two

(AKA Thirty Meals!)

 

Yes, two.  I am an empty nester, still working full time. I am busy most of the time, but I love to cook. I try to buy quality meat at a great price, and that means buying in bulk.  I saw Zaycon Fresh online and… well you know the rest!

 

OK so I now had 40 pounds of chicken… for husband and myself. Crazy? Not at all, as it turns out. In fact, I kind wish I bought more.

 

I wanted to package my purchase wisely, in serving sizes of 2-4. I can eat leftovers the next day the same as anyone, but I generally don’t want to make recipes that have serving sizes 6-8 and then have to eat the same thing for lunch and dinner for FOUR days.  (Sure, cooking like that may save me some time, but I will be contemplating a pizza order by day three!)

 

So, here are my strategies for dividing 40 pounds of chicken up for a household of two:

 

  1. Freezing in Ziplocs, two chicken breasts per bag, seasoned and ready for grilling outside or in my grill pan on the stove. I can use these for a nice dinner with vegetables or can chop the meat up to mix it with salads.

 

These bags each have a chicken breast, ½ cup, olive oil and fresh thyme:

Freezing 2 breast for grilling, step by simple step:

1/2-cup olive oil per bag

2 T. fresh herbs of choice (I used thyme and rosemary)

Freeze ’em!

  1. A few crockpot freezer recipes.  The type you take from the freezer and put right into the crockpot or thaw the night before and cook the next day.  However, I will modify these so they contain no more than 3 chicken breasts good for two meals (no more than that)

I prepped the bags the night before and put in all of the ingredients for the recipe.  I just had to add the chicken when it arrived!

So here is my list of freezer recipes; some of the recipes require additional ingredients that are not frozen, you just add them to the crockpot.

  1. A few fully cooked meals that are then frozen.

Now for some meals can simply be defrosted and heated for dinner. Meals like these have to be delicious when thawed and cooked, not mushy. (Like the chicken meatballs? Delectable!)

Quick Life Hack Tip: These are chicken breasts with the recipe I will use stored with the meat! I place a small Ziploc bag inside the gallon size Ziploc with the recipe tucked into the small bag.  No more wondering about what to make for dinner: when the chicken is defrosted, the recipe is there.

  1. Slicing and pounding some chicken breast prior to freezing. They will be ready for cutlets or francese when you want to entertain or pull two out for a weeknight meal.

  1. Cooking and shredding chicken breast so it is ready for tacos, fajitas, and appetizers (Example: Buffalo Chicken Wing Dip) and then freezing.

I used my electric mixer to shred the chicken. (I made 3 one-pound bags of shredded chicken)

  1. Just freezing breasts so I can do with them what I want if I see a recipe I just have to try.

My Grocery List:

This list is JUST to package your chicken and get it ready to freeze.  I did not include fresh ingredients for garnishes, etc.  The purpose is to have everything on hand to make 40 pounds of chicken freezer-ready for meals like the recipes above.
