Chicken & Veggie Stir Fry: Anti-Sweet After-Halloween Meal

No… more… candy! Halloween is tons of fun, and it’s a treat to feast on sweets, but enough is enough! When your family is done with the trick-or-treating, you can turn to Zaycon Fresh for some healthier eating options.

And there are few meals healthier than those based around chicken and vegetables. The fact that stir-fry cooking is about as easy as it gets? Well, that’s just some icing on the cake. Sorry, sorry: yet another sweet reference…

If you’re looking for a light meal that’s ready in minutes, prep this recipe as-is and enjoy. If you and the family need some extra hearty portions, serve it over a bed of rice or with your favorite noodles. Either way, it won’t take much more than half an hour start to finish for you to prep, cook, and serve this anything-but-sweet, totally delicious meal. (And keep in mind you can always use reduced sodium soy sauce and broth if you want!)

What You Need:

- 4 teaspoons cornstarch

- 1 cup chicken broth

- 2 tablespoons soy sauce

- 1 poundZaycon Fresh Boneless Skinless Chicken Breast, cut into 1/4-inch strips

- 2 tablespoons olive oil, divided

- 1-1/2 cups fresh cauliflower florets

- 1-1/2 cups fresh broccoli florets

- 2 medium carrots, sliced

- 1 small sweet red pepper, julienned or chopped

- 1 small onion, halved and sliced

- 1 garlic clove, minced

- 1/2 teaspoon salt

- 1/2 teaspoon pepper

- 1/4 to 1/2 teaspoon crushed red pepper flakes

- Minced cilantro and/or parsley

 

What You Do:

 

- Combine the cornstarch, broth and soy sauce until smooth; set aside.

- In a large nonstick skillet or wok, stir-fry chicken in 1 tablespoon oil until no longer pink. Remove and keep warm.

- Stir-fry the cauliflower, broccoli, carrots, red pepper, and onion in remaining oil until crisp-tender.

- Add the garlic, salt, pepper and pepper flakes; cook 1 minute longer.

- Stir cornstarch mixture and add to the pan.

- Bring to a boil; cook and stir for 2 minutes or until thickened.

- Add chicken; heat through. Serve with rice or noodles if you’d like, and sprinkle each serving with herbs.

- Enjoy without desert!
